Large consumption of deep processed food increases the risk of death.

In 2018, the Nutrition Epidemiology Research Group of Paris XIII University published a study on organic food and the relationship between organic food and cancer risk. The study found that people who eat less organic food are more likely to suffer from cancer. Although the study did not find a causal relationship, it did not prevent many media from reporting on the anti-cancer effect of organic food.

About 45,000 subjects over 45 years old participated in this study, most of whom were women. Every six months, the subjects were asked to fill in three online questionnaires, which were randomly assigned to eat 24 hours a day for two weeks.

Seven years later, about 600 of them died. The researchers then analyzed these figures and found that for every 10% increase in the proportion of processed foods in the diet, the death rate would increase by 15%.

Deep processed food has undergone several conversion processes, including heating at high temperature and containing additives, emulsifiers and tissue forming agents. Many instant foods with high salt or sugar, vitamins and low fiber content fall into this category.

However, such research inevitably has defects, which depend on accurate self – reporting, while there are many other ” invisible” factors at work. What ingredients in these foods have a negative impact on health?

One commonly accepted assumption is the presence of additives. Researchers have studied the effects of additives on cells and rats under laboratory conditions, especially at the French National Institute of Agriculture.

Nita Folui, a professor at the University of Cambridge’s School of Clinical Medicine, believes that another important information to consider is that most people who eat such foods are low-income people.

She said: ” The consumption of deep processed foods reflects social inequality – people with lower income or education level or those living alone consume more of these foods. These foods are very attractive because they are often cheaper and have better taste due to the high content of sugar, salt and saturated fat, and can be bought everywhere. We must do more to solve these inequalities. “
